  11. 800 gr. / 28 oz. Tomates cortados en dados
  12. 2 cdas. Aceite de oliva
  13. 1 cebolla cortada en cuadritos pequeños
  14. 3 dientes de ajo picados
  15. 1 zanahoria rallada
  16. 1/2 cdta. Tomillo seco
  17. 1/2 cdta. Orégano seco
  18. 1 cdta. Albahaca seca
  19. 1 hoja de laurel
  20. 1 cdta. Sal
  21. Pimienta en polvo. (Opcional)

  1. HACER LA SALSA DE TOMATE
    Calentar una olla con el aceite de oliva y sofreír el ajo con la cebolla.
    Agregar la zanahoria rallada, tomillo, orégano, albahaca y cocinar por un minuto.
    Agregar los tomates molidos, cubitos de tomates, hoja de laurel y sal. Hervir la salsa, bajar el fuego y cocinar lentamente por cerca de ½ hora. Dejar a reposar.
  2. APANAR LA BERENJENA
    Poner la berenjena cortada en bandejas, rociarlas con un poco de sal y dejar a reposar por 1 hora para que salga el agua al exterior y le quite el amargor. Secarlas con papel toalla después de 1 hora.
    Sazonar el pan rallado con un poquito de orégano y ajo en polvo.
    Rebozar las rodajas de berenjenas en harina, huevos batidos y pan rallado.
  3. COCINAR LA BERENJENA
    La berenjena puede freírla o cocinarla en el horno.
    Para cocinarlas en el horno rociar una bandeja de hornear con spray de vegetal, poner las rodajas de berenjenas apanadas en la bandeja de hornear y rociar por encima de la berenjena con el spray de vegetal.
  4. HORNEAR LA BERENJENA A LA PARMESANA
    Precalentar el horno a 232°C / 450° F. y hornear la berenjena hasta que dore.
    En una bandeja de hornear profunda poner una capa delgada de salsa de tomate.
    Poner una capa de berenjena frita u horneada.
    Cubrir la berenjena con salsa de tomate, queso mozzarella y queso parmesano.
  5. Volver a poner otra capa de berenjena, salsa de tomate, queso mozzarella y rociar con queso parmesano.
    Precalentar el horno a 204° C / 400° F
    Poner la bandeja con la berenjena a hornear por unos 45 minutos aproximadamente, hasta que esté caliente y un poquito dorada por encima.
    Dejar a reposar la berenjena por unos minutos y cortar en porciones.
    Servir la berenjena horneada con salsa de tomate.
