- Como les contaba, al no encontrar una berenjena grande compré dos chicas y les saqué apenas una tapita y algo más para emparejar. Para no desperdiciar nada cociné todo y así aprovechar la pulpa. En las fotos se ve como las corté. Ponemos en placa aceitada y con chorro de aceite, sal y pimienta negra por encima. Además le hacemos unos cortes tipo cuadrícula arriba para que se cocine bien y sea fácil de retirar la pulpa.



- Llevamos a horno precalentado y cocinamos 25 minutos o hasta que esté cocido. Las partes más finitas las sacamos a los 10 minutos. Cuando está pronto retiramos la pulpa dejando un poco en la base y costados y raspamos las tapitas finas. Ponemos todo en un bol.



- Lavamos las hojas de remolacha, las cocinamos 5 minutos en agua hirviendo, luego colamos bien el agua y picamos chiquito.



- Añadimos al bol con la pulpa, los huevos duros picados, el atún, el queso e integramos.



- Añadimos también las hojas picadas y mezclamos.


- Rellenamos las berenjenas y ponemos queso rallado a gusto por encima. Llevamos nuevamente a horno caliente 5 minutos.
