- Para la tzatziki, mezclar todos los ingredientes, probar y rectificar al gusto.
- Precalentamos el horno temperatura máxima.
- En una paella a fuego fuerte con un poco de los 2 aceites, ponemos la cebolla picada, el ajo picado y el jengibre picado (con piel o sin piel, eso es a tu elección).
- Salpimentamos y cuando esté pochado y empiece a dorar, añadimos el vino y el tomate. Cuando quede seco, añadimos las especias menos el azafrán.
- En una olla, ponemos el caldo a calentar (sin hervir) y el azafrán, cuando el caldo esté caliente apagamos fuego y el azafrán se infusionará.
- En la olla con el sofrito, nacramos el arroz y añadimos el caldo.
- 12 minutos a fuego máximo, cuando pase ese tiempo, añadimos el brócoli por encima sin llegar a hundirlo en el caldo y lo metemos al horno hasta que no quede caldo (en mi horno son unos 6-8 min más).
- Emplatamos y ponemos 4-5 cucharaditas de café de tzatziki por encima.
